This ratatouille, baked, is a very good and tasty side dish to combine both meat and fish steamed or grilled.
indicative amount for four people
2 carrots 2 medium potatoes
2 zucchini 1 eggplant round
1 medium onion 1 tablespoon
capers
1 sprig of parsley
3 tablespoons oil Olov
salt
- cut all the vegetables into thick slices 4 / 5 mm,
- put them in a pan, previously greased, in a single layer and season with salt and
- bake in preheated oven at 180 degrees for about 20 minutes,
- sprinkle with chopped parsley along with the capers, sprinkle with a tablespoon of vinegar and cook for 10 minutes.
